At Novotel & ibis Melbourne Central, we are wholeheartedly dedicated to fostering a more sustainable operation. As a hotel deeply committed to environmental consciousness, we have implemented policies and initiatives designed to fulfil our fundamental responsibilities and minimize our ecological impact.


Our focus extends to key areas encompassing the environment, our team members, and the community. To actively involve our staff in this commitment, we encourage their participation through initiatives such as public transport, walk to work and or car pool. Additionally, we strive to build meaningful connections with our local community by engaging in volunteer activities and contributing to various programs.


As we explore and improve our operational systems, we want to ensure that the right internal culture structure is in place as well as investing in new initiatives. Our goal is to balance our environmental impact while also enhancing our guest experience and overall improve our business performance. Our internal Green Team are researching sustainable products & services to be used wherever possible. We also want to encourage our team members to communicate our commitment to the environment and corporate social responsibility to all stakeholders of the hotel including guests, suppliers and wholesalers.



Our goal

We want to embrace new ways of doing things for our guests, for them receive the same level of high quality experiences but in a more sustainable way. We will gradually transform and implement new systems and procedures to become a “greener” hospitality partner. We have made 10 COMMITMENTS, that in time, will become part of our daily working life and make us proud to play our part for our cherished environment.

Our values

We recognise that food waste is a significant contributor to climate change globally. We focus on seasonality & customise our menus accordingly. We prioritise the provenance of our ingredients from our region and country. We commit to using meat which is fully traceable to the farmer & sustainably caught seafood, both delivered daily to our kitchens. We engineer our menus to minimise food waste

Our team

From the executive team right through to our trainees, we take pride in playing our part in taking a more sustainable approach to our guest’s experiences. We meet monthly to establish and monitor our “green actions”.
